Steak with Pears and Vegetables
(serves 4)
Ingredients:
4 pork steaks, 2cm thick
2 tablespoons roasted eggplant oil
2 pears, cut in halves
100 g roasted eggplant
100 g roasted zucchini
1 sprig of tarragon
salt, pepper
Ingredients for the sauce
1/2 tablespoon flour
1 cup meat broth
juice of 1/2 lemon
1 teaspoon almonds, chopped
1 tablespoon honey
Salt the steaks and cook
In an oiled pan. Add pear halves, cut side
downwards. Use
the oil from the eggplant jar. When you turn the steaks for
the first time, cover them with eggplant and zucchini so
that they warm and add a nice flavour to the meat. Sprinkle
the steaks with roughly chopped tarragon leaves. Cook the
steaks at moderate temperature, 3 minutes each side. Keep
the pears in the pan. When the steaks are done, transfer
them to a warm plate together with the fruit.
Sauce: add some more oil to the pan if necessary,
sprinkle
with flour and fry. Add the broth, bring to the boil and
add
lemon juice. Bring to the boil again. At the end, add honey
and serve with the steaks and pears.
