Castle Roll
Ingredients:
turkey breast
450 g Castle blend or other frozen vegetables
100 g cheese
1 tablespoon butter
1 tablespoon breadcrumbs
3 cloves of garlic
salt, pepper
Ingredients for the breadcrumb covering:
1 egg
flour
breadcrumbs
oil for frying
Ingredients for the dressing:
4 tablespoons cream yoghurt
capers, minced
pickled cucumbers
salt
Cut turkey breast into thin fillets, beat them
and season with salt
and pepper.
Filling: fry minced garlic in butter, add 100 g Castle blend
and
stew for 10 minutes. Stir in 1 tablespoon of breadcrumbs
and
grated cheese.
Spread the vegetable filling on the fillets, roll into tight
rolls and
cover with the breadcrumb mix. Fry the rolls in hot oil until
they
are a beautiful golden colour. When they are done put them
on
paper tissues to absorb any excess fat.
Salt and stew the rest of vegetables. Mix the ingredients
for the
dressing and serve with the rolls and stewed vegetables.
For the dessert, serve Eta apricot compote.
